Finally a good tesult

Had all sorts of problems with my baker's oven using Lauke Bread Mix until I finally did the maths and now perfect loaf every time. My ingredients for perfect loaf- 400g of any of the Lauke Bread Mix, 280g warm water, three quarters tsp yeast, 1/2 tsp bread improver- measuring must be exact and use whole wheat setting. Add a little more water for German Grain and little less for the Rye - check as mixing to make sure all flour has been absorbed. Mostly I use a mix of 200g of crusty white bread mix plus 200g of any of the other flavours eg German grain etc. Good loaf every time.

Gluggy gluten free bread

I have tried making gluten free bread in this machine 15 times and I thought it was me until my friend who makes Beautiful gf bread in her breville bakers oven tried to make a loaf for me in my machine (same recipe) and yep gluggy bits. Hers has an upright tin and makes the most beautiful bread. Her lid is heavy. My lid is plastic and not very heavy. The machine didn’t even come with the right blade I had to order that separate from Breville! It was a birthday present.

Hate it!

I bought this to use in winter months to get up to kneading so i could shape and bake in my oven as i find bread too small to completely bake in the bread maker. I make our own bread a lot in summer by hand as it rises better. I had to reprove the dough from the breadmaker by hand as the machine doesn't do it properly! Needless to say this machine is looking for a new home now that we have lovely warm weather again.

12 year owner of Breville bread maker then it apparently died the same time I opened a new jar of yeast tried everything including another two jars of yeast must need a new bread maker tried the new one same result so did what Breville advised used warm water hey great. got in my rubbish bin retrieved the old one hey its alive and working well

Bought this today...have had a breville years ago...never failed..this one gets stuck after kneading

No not happy....do not buy....purchased today..followed all instructions. ..had a breville years ago and it never failed...this one can not get past kneading...bad product!...I will try a different brand...very dissapointed in the new model.....how difficult is it to make a loaf of bread...might go back to basics and bang it in the oven...money wasted.

An effort to get the damn thing to work!

Won't knead by itself! It's like it can't start by itself. I manually start it by turning it and it spins, so I put the pan back in and click and it stops shortly after. So frustrating! Hasn't once worked for me since I bought it!
I got this with a voucher for my birthday after wanting one for years only to be left disappointed.

Reliable Bread Factory

I received my bread oven as a Christmas gift in 2011. Since then, I have baked 796 loaves of bread, with this machine. My recipe for white bread is; 300ml water, 2 crushed vitamin c tablets (500mg ascorbic acid), 20g olive oil, 16g white sugar, 5g iodised salt, 500g wallaby bakers flour, 12g yeast. N.B. the vitamin c is used as a substitute for soy bread improver. It makes the bread take shape and rise. Up until 1995, all bread was used with ascorbic acid (vitamin c). It stops collapse.
Fruit loaf just add 3g cinnamon powder, 2g Chinese five spice powder, 30g currents and 40g sultana. This machine is awesome!!!!

Just an update. If you use tap water and you can smell chlorine, it might kill the yeast and cause your loaf to be flat. In this case buy some bottled water to use.Machine is still going strong.

My Breville has been fine

I only ever cook wholemeal and happy enough, and this one doesn`t have that long initial wait time before starting as my other machine.

trips safety switch on baking

We got a Bakers Oven as a gift which keeps tripping the power safety switch every time it reaches the baking stage. I made dough without any problems but it does not like baking anything ? any ideas ?

Never a problem

The machine works flawlessly. Sometimes I don't.
Great machine but just hold back a little on the yeast so that the bread doesn't rise above the pan.
It's opened up a new world of creativity to me!
I find it easy to clean and very easy to use, after a few mistakes on my behalf.

I should have known beter

Breville bakers oven would not buy it full stop
have tried 4 times to bake a loaf off laucke multigrain soy @linseed it started well till half hour befor end of baking then all fell in to a heap crusty on outside on the inside it was stiky
followed recepy to a t and still a flop after 4 times i give up

Hi Arnie - we're sorry to hear you've had trouble making bread. Laucke recommends if you get sinking in the loaf that you reduce the water by around 10%. Hope this improves your results.I agree. I am about to give up!!! I have fresh ingredients, organic flours with the right protein, measure everything perfectly, (except for the bread enhancer as I can't eat soy and don't want chemicals), every loaf rises beautifully until it has to bake, then the centre collapses! Have tried different recipes from the Breville recipe book and it happens to everything, Why why why. Most frustrating!

Great machine

This is my first bread maker, so before buying I read a lot of reviews of this and other machines. Based on those I would not have bought this brand or model, but I got a really good deal (second hand, but like new) and I thought I’d give it a go. To my surprise, this machine is very quiet, and I can’t believe anybody criticised it for this aspect. It mixes the dough well which I was also sceptical about. I enjoy watching as it is happening.

Like most people I paid my learning fee by stuffing up my first 3-4 loafs, which was disappointing, but since then my breads are better and better. Mistakes I made: did not push the bucket down enough, so the dough wasn’t mixed properly (well, hardly…), put too much water (or not enough flower) and not enough yeast in the mix, so the loafs came out flat and dense; put too much something in the mix and the dough rose above the bucket and overflew the edges, onto the heating element, then got burnt (an hour cleaning fixed it). It is important to follow the recipes to the word and in my experience maybe put in a touch more yeast. Try the smaller loafs first and only bake the larger one once you perfected the ingredients. If you prefer a harder crust (like we do), once the bread is ready, you can put on the “Bake Only” function for 15-20 minutes. Unfortunately you have to turn it off manually after the desired time as it is set for 1 hour only without being able to adjust it.

Nothing really except the bake only function could have been set up so the baking time is adjustable. Engineers: a simple programming could fix this!!!

If your not getting good bread -Try this

My first Breville is still going after 10 years but the case is getting very brittle so bought the Bakers Oven and although I really preferred the shape of the tin of the old original this one is doing fine when you realize that we are paying under $100 for these current machines.
For those having trouble making the perfect loaf try this: Get a digital set of scales and measure everything. Put 289 mls (or grms same thing) of tepid water in the pan. Not cold, not hot. This is most important. Then add 436 grms of Laucke Crusty Breadmix, make a slight hollow then add 1 1/4 teasp of the Laucke Yeast that comes with the breadmix. Set on Basic and Crust on H for dark. Three hours later you should have the perfect loaf.

Store breadmix in the pantry but roll down your yeast packet, store with clip and keep in the freezer.
These measurements have given me the perfect loaf. Anymore and the bread hits the glass top and that means you have to clean it. I have a folded piece of alfoil that i sit on top of the glass on the outside while the bread is cooking for the last hour, just make sure it doesnt slide over the air vents. I really believe if you do not get good results with these measures and the Laucke Mix you machines would have to be faulty.

Good for kneading, not so much baking

If you're just looking for a machine to knead up dough, then you will have no problems with this bread maker. I've had mine for almost a year, using it a few times a week and I haven't had any problems.

It comes with a timer so you can control when the dough / bread is done, which is great if you want the bread to be ready by the time you wake up / get home from work

I can't say I'd recommend using it to actually *bake* bread though, besides the odd shaped cube it makes the quality & taste of the bread isn't that nice - you're much better off using the dough setting, hand shaping, & baking.

The machine can be a little bit jumpy so I'd keep it away from the edge of your benchtop.
Relatively inexpensive, kneads dough well, preset timer,
I wouldn't use it to actually *bake* the bread in.

Breads and jams have been a great success with our long lasting bread maker.

I have trouble believing the poor reviews here- I use Laucke bread mix and have never had a bad loaf from this machine.

Our machine was purchased second hand and has been working fine for 5 years since.

Good while it lasted

We rather enjoyd the bread produced by the Breville Bakers Oven. It was especially easy when using premix bread flour and always lovely to wake up to the smell of fresh bread.
Overall: I'd recommend the Brevile Bakers Oven to friends but don't expect it to last! If we buy another bread machine, I will look at other brands more closely but may end up getting this one again because of the price.
It's easy to use and keep clean, has some recipe suggestions, and was priced within our budget.
Downsides are that it is quite noisy and sometimes woke me up at night, but I think this would be common to a lot of bread makers, and as with many modern appliances, the heating element has broken after just 2 years!

Terrible bread

I've had 2 previous breadmakers both of which made good bread. Recently I bought the Breville Bakers Oven because I thought I'd go back to my own bread. I've wasted heaps of ingredients making the most terrible bread. It either rises and then flops or doesn't rise at all. I've tried all ways, changed flour, yeast, sugar - you name it I've tried it. it will be going back to the shop next week

Breville Custom Bread Maker

We bought a Breville Baker's oven two weeks ago and have used it 3 times. So far none of the breads that we have made have risen.

At first we thought it was the pre-mix flour (Lauke wholemeal) we bought, so we made it from scratch and followed the guidelines of the instruction manual. Didn't work. In fact the bread looks exactly the same, flat (half the loaf tin provided) and wet in the middle.

We have tried 2 different heat settings (whole wheat and the frech bread setting). We have used 2 different types of flours and methods. And nothing works.

So we tried to register the product online in order to ask for help, and guess what? When we to tried to log in, the online customer service had a 'fatal error' message. We originally had a Panasonic breadmaker which worked like a charm, so what's wrong with Breville??

It sounds like you have tried a few different ways of baking, so perhaps this machine has a fault. Please return it to the store you purchased it from - they should be able to provide you with a replacement.

Bad Bread Machine

2 days out of warranty and it broke - designed not to last with poor quality manufacture and materials.
Breville service wanted $100 +postage for a new bucket. Try to avoid Breville appliances. Their wiz stick broke aswell, it now fills up with water when it is washed and then leaks out whilst in use into the bowl.
It did work when I first purchased it.

loved the bread machine it cooked well the first few times i cooked wheatmeal ,then decided to cook white bread followed the recipe exactly and went to bed,woke up 4hrs later, to a smoked out house,and ran to the kitchen to found my bread and had risen over the side very shocked and not happy will never do tht again with a bread maker if i ever buy another this ones pretty much ruined now.so i wouldnt leave it cooking over night.also the dough hook is annoying as when removed leaves a large hole in the bottom of loaf which when making a sanwich falls to peices soo you only get four good slices the rest wasted
wheatmeal bread was nice.
found the dough rose over the side with white bread,nearly causing fire,didnt like dough hook rips bread.

Questions & Answers

I have a brand new Breville Bread Machine. I have made 2 loafs of bread so far and both times the paddle has stuck in the bottom of the bread. I washed the paddle well and dried and made sure that the paddle was in upright position when placing the ingredients into the pan....any suggestions? Btw, I live in Canada.
It is easier to get out with a rub over with butter before use but I find I usually have to get it out of the bread too.After I wrote this I read on you tube somewhere, to put a drop of oil where the mechanism is for the paddle to flatten. As I do not know what the two screw like sights are for I also oil there.....so far so good. Thank you Mary for your reply.
Every time I bake, kneading blade is stuck inside the loaf. How can I stop this from happening?
Hi, I am in Western Australia in the Great Southern. I have a BB280 and use it every week. Is there a service agent I can take my mixing bowl to, because I think flour has gone down alongside the mixing shafts, because they are very tight and you can hear the crunching of crumb? Thanks!
What I do is when I remove the bread put the mixer blade in something to soak if it needs it while I have the pan or bowl { the container that held the baked loaf away from the baking oven which should never at any time have liquid in it due to the fact I wish to remain alive [water and electricity is lethal] I cover with water no dish wash or anything to make sure when the blade goes back on there is no old bread clinging to anything. If there is anything stuck inside the blade a good soak and under the tap to wash through the inside
